Thai Lemon Grass Chicken Sticks

Serves 8 in 30 Minutes

Here's a different way to serve up some chicken at a cocktail party or buffet.

Finely dice the water chestnut, add to the marinade and mix with the minced chicken.

Divide the mixture into 12 portions and wrap lower half of lemon grass sticks with it in a uniform shape. i.e. finger shape.

Dip the chicken coated sticks in the breadcrumbs.

Pan-fry chicken sticks until golden and cooked through. This will take about 10 minutes.
