A nice alternative to normal chips!

Peel and cut the potatoes into chips, preheating the oven to 220°C
Place the chips in a large bowl and drizzle in olive oil, add the salt, pepper, and cornflour and mix with your hands ensuring good coverage
Spread the chips out on an oven tray or two making sure they're well spaced, and put in the oven for 15 minutes
Take the chips out and turn them over, placing them back in the oven for a further 10-15 minutes until crisp
Serve!
Add chilli powder, garlic salt or cayenne pepper for a different twist.
