Peal and dice the potatoes into 1.5cm cubes and boil until just soft.
Meanwhile finely dice the onion.
Refresh the potatoes in cold running water to cool.
Drain the potatoes and mix with the onions and mayonnaise being careful not to mash.
Season with salt and pepper.
Serve in a bowl decorated with chopped chives.
