A nice rich fruit cake, this is a really easy recipe to make. There is no technique like 'creaming' or rubbing in' and no chance of the mixture curdling.

Begin by heating the oven to 180°C and lining an 8"" tin with baking paper. Put the water into a saucepan.
Add the margarine.
Add the sugar, fruit, bicarbonate of soda and mixed spice to the saucepan. Bring to boil and simmer for 1 minute.
Remove and cool.
Beat the eggs and add to a bowl.
Add the flour and salt.
Stir in the cooled fruit mixture.
Fill the cake mix into the prepared cake tin.
Before placing in oven cover the top of the cake with baking paper to stop the cake burning.
Bake for about an hour in the centre of the oven.
Test by inserting a skewer into the centre of the cake. It should come out clean when done.
