This can make a really good starter or main course.

Make the filo pastry basket first. Cut the pastry into squares15cms x 15cms. You will need 4 squares per portion so that's 16. Lay out four squares and brush with oil then place another square on top but lay it so that the corners of the square underneath are exposed i.e. turn the square you are placing on top clockwise a quarter turn.
When you place it onto the first piece you will have a shape that looks like a star. Brush all over with oil then place another on top turning again and brushing with oil. Repeat with all the squares then using ramekin dishes brushed with oil pick up the filo squares and place into the ramekins pressing the centres down and mould to the inside of the ramekin.
Bake in the oven at 190C for 10-12 minutes until golden brown. Remove allow to cool for 10 minutes then remove from the ramekin and place on a wire cooling rack.
You must use Noilly Prat because any other vermouth will just taste awful.
