Heat the oil in a pan and add the mustard seeds, leaving to fry for 1 minute.
Add the cumin, ginger, turmeric and chilli powder and fry for 2 minutes, stirring constantly.
Add the vegetables and season, mixing to cover the veg well. Add a dash of water.
Cover the pan and cook for 5 minutes, stirring every couple of minutes.
Add the lemon juice and coriander and mix well for 1 minute.
Serve!
