Great treat for mum on Mother's Day but remember to clean the kitchen afterwards. For this recipe you will need 2 sandwich tins or flexi-moulds, baking paper, cooling rack, pastry brush, mixer or food processor. Fold: means to mix lightly using a metal spoon, so that as much air as possible remains in the mixture. This helps with the rising of the cake.

Preheat the oven to 180C or Gas Mark 4. Grease and line two 10cm sandwich tins with baking paper or use 2 fleximolds.
Cream together the butter and sugar using a mixer or food processor.
Beat together the eggs in a cup or small bowl.
Add the egg to the butter and sugar mixture a little at a time.
Sift the flour and baking powder into a bowl and gradually fold into the butter sugar mixture.
Divide the mixture between the two tins and spread out lightly.
Bake for 15 ? 20 minutes Remove from the tins and cool on a cooling rack, allow to cool.
Whip the cream with a whisk and spread on one of the bases. Spread jam on the other base then sandwich the two together.
